Meatlessmonday Goals 💚🍴🤤⠀ ⠀ When life is busy but you still want to eat well, throw veggies on a baking pan mixed with a clean oil and some salt, maybe protein (miso covered tempeh is a great option!) on another pan and call it a day! 🙌⠀ ⠀ No need to over think this nutrition thing. Don’t worry about what you ate in 1 meal, look at the overall week and see if you sprinkled in your veggies, proteins, carbs and especially fat! 👌🥑⠀ ⠀ Despite being totally demonised in the media, white potatoes are one of the easiest to digest and incredibly nutritious vegetables! In reality a plain, medium potato can actually aide in weight loss/maintenance. Potatoes are an excellent source for vitamins C and B6, a good source for fiber (which keeps your stomach satisfied longer) and manganese, AND they have more potassium than bananas! 😱🍌⠀ ⠀ A common complaint about this humble veg is its high GI content. Food's GI can be significantly altered by what you eat with it. Combining fat (olive oil, avocado), acid (salsa, citrus), protein ( legumes), fiber (legumes, leafy greens) and/or low GI foods (most fruits, non-starchy veggies, lentils) can greatly reduce the GI load of a potato. 🌿⠀ ⠀ Also fiber, particularly soluble fiber, is excellent at slowing down the body's absorption of sugars. Fiber slows down digestion, resulting in the sugar being absorbed more slowly.
